  • 1 can of chickpeas, drained and rinsed

  • 1/4 cup buffalo sauce (plus extra for coating)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • Rice paper wrappers

  • Neutral oil for frying (e.g., avocado or vegetable oil)

Directions

Step 1 Smash the Chickpeas

Place the chickpeas in a bowl and lightly smash them with a fork or potato masher. Leave some texture for a hearty bite. Mix in the buffalo sauce, garlic powder, smoked paprika, salt, and black pepper. Stir until evenly combined.chickpeas and buffalo


Step 2 Prepare the Rice Paper Wraps

Fill a shallow dish with warm water.

Dip one rice paper wrapper into the water for about 10-15 seconds until it softens (don’t over-soak). Place it on a clean surface.

Step 3 Assemble the Chickpea Wings

Spoon about 1-2 tablespoons of the chickpea mixture into the center of the softened rice paper. Fold the sides in and roll it up tightly, like a spring roll. Repeat with the remaining chickpea mixture and rice paper.assemble the chickpea wings

Heat about 1/2 inch of oil in a skillet over medium heat. Once the oil is hot, carefully place the wrapped chickpea wings into the pan. Fry for about 2-3 minutes on each side, or until crispy and golden brown. Transfer chickpea wings to a paper towel-lined plate to drain excess oil.
