Ingredients:

  • Small potatoes (red or Yukon gold), quartered

  • Olive oil

  • Salt and pepper, to taste

  • Fabalish Tzatziki

  • Cucumber, finely chopped

  • Fresh dill, chopped

  • Lemon wedges (optional, for serving)

step 1: roast the potatoes


  • Preheat your oven to 400°F (200°C).

  • Toss the quartered potatoes with olive oil, salt, and pepper.

  • Spread the potatoes on a baking sheet in a single layer and roast for 25-30 minutes, or until they are golden brown and crispy on the outside. Stir halfway through for even roasting.

  • Remove the potatoes from the oven and let them cool slightly.

  • In a large mixing bowl, combine the roasted potatoes, Fabalish Tzatziki, and chopped cucumber.

  • Gently toss until the potatoes are well coated with the tzatziki.

  • Sprinkle the fresh dill over the salad and gently mix.

  • Serve immediately or chill in the refrigerator for 30 minutes for a cooler, more refreshing salad.
