Ingredients:
Small potatoes (red or Yukon gold), quartered
Olive oil
Salt and pepper, to taste
Fabalish Tzatziki
Cucumber, finely chopped
Fresh dill, chopped
Lemon wedges (optional, for serving)

step 1: roast the potatoes
Preheat your oven to 400°F (200°C).
Toss the quartered potatoes with olive oil, salt, and pepper.
Spread the potatoes on a baking sheet in a single layer and roast for 25-30 minutes, or until they are golden brown and crispy on the outside. Stir halfway through for even roasting.
Remove the potatoes from the oven and let them cool slightly.
step 2: prepare the salad
In a large mixing bowl, combine the roasted potatoes, Fabalish Tzatziki, and chopped cucumber.
Gently toss until the potatoes are well coated with the tzatziki.
step 3: Garnish and Serve:
Sprinkle the fresh dill over the salad and gently mix.
Serve immediately or chill in the refrigerator for 30 minutes for a cooler, more refreshing salad.
Optional: Serve with lemon wedges for a zesty kick.
