This recipe serves 4, with each portion being a hearty, nutrient-packed salad that's fresh and satisfying. Enjoy!
Ingredients
For the Salad Base :
- 8 cups mixed greens (such as romaine lettuce, spinach, or kale)
- 2 cups cherry or roma tomatoes , halved
- 2 cups shredded red cabbage
- 1 cup corn kernels (fresh or frozen, thawed)
- 1/2 cup red onion , minced
- 1 avocado, diced
- 1/2 cup fresh cilantro , chopped
For the "Taco Meat" :
- 2 cups walnuts , soaked for 4 hours (or sunflower seeds for a nut-free option)
- 2 tablespoons taco seasoning (make your own or use a store-bought one with no additives)
- 2 tablespoons lime juice
- 2 teaspoons smoked paprika (optional)
- 1 teaspoon cumin
- 1/2 teaspoon chili powder (optional)
Optional Garnishes :
- Sliced jalapeños for extra heat
- Pumpkin seeds or Sunflower seeds for crunch
- Salsa or guacamole for added flavor
- Lime wedges for squeezing over the salad

Queso First: Start with the Fabalish Queso at the bottom. This keeps the salad greens from getting soggy. Add about 2 tablespoons of Fabalish Queso into each mason jar.
- Walnut "Taco Meat" : Add about 1/4 cup of the "taco meat" on top of the Queso in each jar. The walnut mixture is hearty and will sit well without getting soggy.

Pico de Gallo: Add 1/4 cup pico de gallo. To make: Finely chop tomatoes, onion, cilantro, and jalapeño, mix with lime juice and salt, then let sit for flavors to meld.
