Ingredients

For the Salad Base :

  • 8 cups mixed greens (such as romaine lettuce, spinach, or kale)
  • 2 cups cherry or roma tomatoes  , halved
  • 2 cups shredded red cabbage
  • 1 cup corn kernels (fresh or frozen, thawed)
  • 1/2 cup red onion , minced
  • 1 avocado, diced
  • 1/2 cup fresh cilantro , chopped

For the "Taco Meat" :

  • 2 cups walnuts , soaked for 4 hours (or sunflower seeds for a nut-free option)
  • 2 tablespoons taco seasoning (make your own or use a store-bought one with no additives)
  • 2 tablespoons lime juice
  • 2 teaspoons smoked paprika (optional)
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder (optional)

Optional Garnishes :

  • Sliced jalapeños for extra heat
  • Pumpkin seeds or Sunflower seeds for crunch
  • Salsa or guacamole for added flavor
  • Lime wedges for squeezing over the salad

Directions

Layering Instructions (Salad Jar Meal Prep):

  1. Queso First: Start with the Fabalish Queso at the bottom. This keeps the salad greens from getting soggy. Add about 2 tablespoons of Fabalish Queso into each mason jar. 

  2. Walnut "Taco Meat" : Add about 1/4 cup of the "taco meat" on top of the Queso in each jar. The walnut mixture is hearty and will sit well without getting soggy.

  3. Pico de Gallo: Add 1/4 cup pico de gallo. To make: Finely chop tomatoes, onion, cilantro, and jalapeño, mix with lime juice and salt, then let sit for flavors to meld.



  4. Sweet Corn: Add in 1/4 cup fresh sweet corn kernels for a hint of sweetness and texture.



  5. Bell Pepper: Add in finely chopped bell peppers for extra crunch and color.


  6. Chopped Lettuce: Layer chopped lettuce on top to create a barrier, keeping it crisp and separate from the dressing and moist ingredients below.



  7. Pumpkin seeds or Sunflower seeds: Top with pumpkin or sunflower seeds for an added crunch & protein boost!

  8. Seal: Seal your jar for freshness. Great for up to 4 days.



  9. Toppings: Add fresh avocado the day of eating to keep it green and vibrant.Top with more queso, cilantro, lime juice, jalapeño, or your favorite extras for added flavor.
