Recipe for Crunchy & Creamy Taco Bites with Vegan Queso

Ingredients for Taco Bites:
- 1 bag tortilla chip scoops
1 cup Abbott’s plant-based ground beef
1 cup Fabalish Queso
1 cup of Fresh Salsa (see recipe below)
Ingredients for Salsa:
3 medium tomatoes, finely diced
1 small onion, finely chopped
1 jalapeño, finely diced (seeds removed for less heat, if desired)
Juice of 1 lime
1/4 cup fresh cilantro, chopped
Salt to taste

Directions
Step 1
Prepare the Plant-Based Ground Beef:
In a skillet over medium heat, cook Abbott’s plant-based ground beef according to the package instructions. Stir occasionally until heated through and slightly browned. Set aside.
Step 2
Make the Fresh Salsa:
In a mixing bowl, combine the diced tomatoes, chopped onion, diced jalapeño, lime juice, and chopped cilantro.
Season with salt to taste. Mix well and set aside to let the flavors meld.
Step 3
Assemble the Loaded Scoops:
Preheat your oven to 350°F (175°C).
Arrange the tortilla chip scoops on a large baking sheet.
Fill each scoop with a spoonful of the cooked plant-based ground beef.
Top each with a dollop of Fabalish Queso.
Place the baking sheet in the oven and bake for 5-7 minutes, or until the queso is warm and slightly bubbly.
Step 4
Add the Salsa and Serve:
Remove the loaded scoops from the oven and let them cool slightly.
