Prepping Cabbage for Dumplings




  • Chop the Cabbage – Start with Napa or green cabbage. Slice it in half, remove the core, and finely chop the leaves into small pieces. The finer the chop, the better it blends into the filling

Removing Moisture from Cabbage


  • Salt to Draw Out Moisture – Transfer the chopped cabbage to a bowl and sprinkle with about 1 teaspoon of salt per 2 cups of cabbage . Toss to coat evenly and let it sit for 10–15 minutes . The salt will pull out excess moisture, preventing soggy dumplings.
  • Squeeze Out Excess Water – After resting, use a clean kitchen towel or cheesecloth to wring out the cabbage . Gather it into a bundle and squeeze firmly to remove as much liquid as possible. If using your hands, press it against a fine-mesh sieve

Prep all filling ingredients

  • Press the Tofu – Wrap ½ block of firm tofu in a clean kitchen towel and press it under a weighted plate for 10–15 minutes to remove excess moisture. Once drained, crumble it into small pieces.(Alternatively --try chickpea tofu for a new texture!)
  • Mushrooms : Mince 1 cup of mushrooms (trumpet, shiitake or cremini work well).
  • Onion : Finely chop ½ small onion
  • Ginger: Use the edge of a spoon to scrape off the skin from a 1-inch piece of fresh ginger .
  • Garlic: Peel 2–3 cloves of garlic by smashing them lightly with the side of a knife to loosen the skin.

Sautéed Vegetable Dumpling Filling

Heat 1 tablespoon of oil in a pan over medium heat . Add ½ small onion (finely chopped) , 2–3 cloves of garlic (minced) , and 1-inch ginger (grated or minced) , cooking for 2 minutes until fragrant. Stir in 1 cup minced mushrooms and cook for 3–4 minutes until softened. Add ½ block firm tofu (pressed and crumbled) and sauté for 2 minutes until lightly golden. Mix in 2 cups finely chopped cabbage (pre-salted and squeezed dry) and cook for another 2 minutes . Season with 1 tablespoon soy sauce (or tamari) and optionally ½ teaspoon toasted sesame oil , stirring for 1 more minute to meld the flavors. Finally, add ¼ cup finely chopped green onion , stir briefly, then remove from heat. Let cool before using as dumpling filling.

Filling and Folding Dumplings with Wonton Wrappers

  1. Prepare Your Station – Set up a clean surface with:

    • A small bowl of water (for sealing edges)
    • Your cooled filling
    • A stack of wonton wrappers
  2. Fill the Dumplings

    • Place 1 teaspoon of filling in the center of a wonton wrapper.
    • Dip your fingertip in water and lightly moisten the edges of the wrapper.
  3. Fold & Seal

    • For a simple triangle: Fold the wrapper in half diagonally, pressing the edges together to seal.
    • For pleated edges: Fold in half, then pinch small pleats along the top edge while sealing.
    • For a “nurse cap” shape: Fold into a triangle, then bring the two outer points together and press to seal.
  4. Ensure a Tight Seal – Press out any air pockets to prevent bursting during cooking.

Steaming Dumplings in a Bamboo Steamer

  • Prepare the Steamer

    • Fill a wok or large pot with about 2 inches of water —enough to create steam but not touch the dumplings.
    • Bring the water to a gentle simmer over medium heat.
  • Line the Steamer

    • Add parchment paper with holes to fit the steamer trays, or use cabbage leaves to prevent sticking.
    • Arrange dumplings in a single layer , leaving a little space between them so they don’t stick together.
  • Steam the Dumplings

    • Stack the bamboo steamer trays and cover with the lid.
    • Place the steamer over the simmering water and steam for 8–10 minutes , or until the wrappers turn translucent and the filling is hot.
  • Serve Hot

    • Carefully remove the steamer from the heat and let the dumplings sit for 1 minute before serving.
    • Enjoy with your favorite dipping sauce, like Chili Crisp Ranch !
