Ingredients

  • 2 large cucumbers

  • 1 cup Fabalish Tzatziki

  • ½ cup cherry tomatoes, finely diced

  • ¼ cup red onion, finely diced

  • ½ cup vegan feta cheese, crumbled

  • 2 tbsp fresh cilantro, chopped (or sub fresh parsley)

  • Salt and pepper, to taste

  • Optional: olive oil drizzle or lemon zest for garnish




Directions

  1. Prep the cucumbers
    Wash cucumbers and slice them in half lengthwise. Use a spoon to gently scoop out the seeds, creating a shallow “boat.” * Tip: Save the insides for refreshing cucumber water!

  2. Layer the tzatziki
    Spoon about 2 tablespoons of Fabalish Tzatziki into each cucumber half, spreading evenly.

  3. Add toppings
    Top each boat with chopped tomatoes, red onion, and crumbled vegan feta.

  4. Finish with herbs
    Sprinkle fresh cilantro over the top. Add salt and pepper to taste. Optional: drizzle with a little olive oil or a pinch of lemon zest for extra flavor.

  5. Serve immediately
