
Fabalish Coleslaw with Rhubarb, Ginger & Fresh Herbs

Ingredients
- 2 cups shredded purple cabbage
2 cups shredded green cabbage
1 small red onion , thinly sliced
½ cup carrots , thinly sliced or julienned
½ cup rhubarb , finely diced
2 tbsp fresh ginger , grated
¼ cup fresh cilantro , chopped
½ lemon, juiced
2 tsp brown sugar
½ cup Fabalish mayo
Salt and pepper, to taste
Directions
1. Prep the vegetables.
In a large bowl, combine the purple cabbage, green cabbage, red onion, carrots, rhubarb, and cilantro.
2. Make the dressing.
In a small bowl, whisk together:
Fabalish mayo
Grated ginger
Lemon juice
Brown sugar
Salt and pepper to taste
3. Toss it all together.
Pour the dressing over the slaw and toss until evenly coated.
4. Chill (optional).
Let the slaw sit for 15–30 minutes in the fridge before serving to let the flavors meld. It gets better as it sits!
